Everything you need to bake a good sourdough loaf in a normal home oven. Greta shows the whole process in one afternoon, using doughs she prepared the day before so you can see every stage: feeding and reading a starter, mixing and autolyse, stretch-and-folds, bulk fermentation, pre-shaping and shaping, scoring and baking in a Dutch oven. You shape two loaves of your own to proof overnight and bake the next morning, and you take home a jar of her starter (it's been going since 2005), a proofing basket and a baking schedule that fits around a work week. Small group, lots of flour, coffee and fresh bread included.
